Pasta al limone

Award-winning chef and long-time champion of vegetarian cooking Anna Jones has a new book of ultra-simple recipes that are bursting with flavour, like this one-pot pasta al limone.

Ingredients (serves four)
400g spaghetti
2 large unwaxed lemons
1 clove of garlic, peeled and bashed
100ml olive oil
Flaky sea salt
50g salted butter
40g grated parmesan
Half a bunch of basil, leaves picked and torn

Method
1. Put the spaghetti into a large, lidded saucepan. Grate in the zest of the lemons and add the garlic, olive oil and 1 tsp sea salt.
2. Add 1 litre of boiling water, cover and bring to the boil, then remove the lid and simmer for 8 minutes, using a pair of tongs to turn the pasta in the thickening pasta water every 30 seconds or so.
3. Squeeze in the juice of one of the zested lemons and simmer for a final 2 minutes.
4. Once almost all the water has evaporated, take the pan off the heat, stir in the butter and parmesan and leave to sit for a minute or two, so the pasta can absorb most of the remaining water and form a lemony sauce. Add more salt, lemon juice, butter or olive oil as needed. Tangle into four bowls and top with the remaining parmesan and the basil.
